Canning Salsa and Mango Salsa
Ingredients:
Tomatoes
Tomatilos (mexican tomatoes)
Onion
Celery
Green Pepers
Jalapeno Peppers
Garlic
Cilantro
Salt
Lemon Juice
If you want your salsa flavored have your other ingredient ready. We will use Mango, however you can add blueberries, papaya, pomegranate, star fruit, kiwi or anything else you desire.

3 medium tomatoes
1 small onion
1 small green pepper
1/3 c. diced celery
1 1/2 tsp. salt
2 Tbsp. vinegar
2 Tbsp. sage
1/8 tsp. pepper
Peel and dice 3 small tomatoes. Add one monced small green pepper, 1/3 cup diced celery, 1 1/2 teaspoons salt, 2 tablespoons vinegar, 2 tablespoons sage, and 1/8 teaspoon pepper. Chill several hours. Makes 4 servings. Can add 1 can small shrimp.

1 large avocado
2 tsp. vinegar
1 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
2 medium tomatoes, peeled and diced
3 Tbsp. grated onion
Get tomatoes ready first. Mix vinegar, salt, pepper, and Chili powder. Peel and mash avocado. Add to other mixture. Last add tomatoes.

1 (11 oz.) box goldfish
2 lb. mixed nuts
1 (12 oz.) box Corn Chex
1 (10 1/2 oz.) box Cheerios
1 (6 oz.) box Rice Chex
1 (10 oz.) bag pretzels
2 c. oil
6 to 8 Tbsp. Worcestershire sause
1 Tbsp. garlic powder
1 Tbsp. onion powder
Mix all cereals together. Shake oil and seasonings in a jar. Add nuts, goldfish, and pretzels to cereal. Pour oil mixture over all, stirring to coat. Bake at 250*...

Hot Chocolate Mix
11 cups powdered milk
4 cups creamer
1 cup powdered sugar
4 cups instant chocolate drink mix (i.e. Nestle’s Quick)
1 pkg. Mini marshmallows (optional)
Mix all ingredients together throughly. Makes about 1 gallon of mix. To use add 1/3 c. ix to 1 cup hot water. Stir until dissolved.

*2 c. blueberries
*1/2 medium red onion, peeled and diced small
*2 jalapenos
*1 red bell pepper
*3 Tbsp. cilantro
*1/4 c. fresh lime
*Salt to taste
Chop all of the ingredients finely and mix together. Serve over the top of chicken or other meat or with chips, etc.

*2/3 c. lowfat cottage cheese
*3 Tbsp. skim milk
*1 Tbsp. tarragon vinegar
*1 garlic clove, minced
*1 Tbsp. sliced green onion tops
In a blender or food processor, blend cottage cheese, milk, vinegar, and garlic until smooth. Add onion tops and blend until just combined. Store in refrigerator. Yields 3/4 cup.
