Cling-free peaches are peaches with stones which do not cling to the flesh inside of the peach, making it easy to remove the pit of the peach without damaging the flesh.  Cling-free peaches are the best for canning.  I was very happy when I was able to get cling-free peaches for the steal of a deal ($7 per 30 pound box.  I purchase 3 boxes).
